I have a 3 inch thick pine slab that I want to use for an outdoor countertop that will be covered by a roof. It may be subject to the swirling snow or driving rain but normally will be out of the elements for the most part.
I have managed to keep the bark on the edge of it and like that look to it but I know it would be hard to keep attached. I am looking for input on what would be the best finish to use to hold up to the elements and also should I leave it natural or use some sort of stain.

One sure way would be to encapsulate it in epoxy pouring resign, but pricey.

I would avoid epoxy. You need to apply it to all sides or the natural expansion/contration will either warp the board or it will crack the epoxy.Epoxy has very poor tolerance to high levels of UV. Even under a porch, it may be damaged. Epoxy needs to be covered with another clear finish that contains high levels of UV inhibitors. Your best option may be a top grade marine exterior varnish. Look for brands like Pettit, Wolsey, Interlux or, best of all, Epifanes. Go to a marina or a marine supply store.Howie.........
Try boiled linseed oil on both cut surface and bark.
About 2" of concrete would be a good covering, and durable. Concrete, bluestone, slates or other stones are far preferred for exterior surfaces. Wood is wood. To cover with any finish means periodic maintenance will always be required, for the life of the installation. Think about beltsanding the cracked and peeling 1/8" thick epoxy to remove it. Or how about a weekly coat of linseed oil - don't forget the underside!
Wood is not as universal a material as we might want it to be. If this a cooking type countertop, say next to a grill, then make a nice 1/2" or 3/4" Walnut oiled cutting board that can be stored inside, out of the weather. Better yet, make two, and provide storage just under the wood top of a kitchen table or island. Easy to store and find and use.
