I wouldnt' think so. The purpose of finishing both sides relates to moisture transfer, and having comparable top coats should be enough.
The need to finish both sides depends heavily on how the wood is used, and what will hold it in place. Tble leaves that are fixed only at the hinges, are quite prone to warping. Case goods which are joined at top and bottom seldom need to have the inside finished.
I've never bothered, but if you want to be sure, do the experiment. Take a scrap board, cut it in half, and finish one filling one side only, and the other filling both sides. When the finish is cured, leave both pieces in the bathroom with a small space heater set high for a couple hours.
If there's a difference, you'll see it. If not, at least the bathroom is nice and toasty for taking a shower.
