Will be making a console that will go in an 18 wheeler [truck]. There will be extreme temp swings plus sun light to contend with. What finish would be the best to use. Also what to use to fill the voids in highly figured walnut,

I hope these are two separate questions, since the best finish by far for the 18-wheeler is high quality oil based enamel. The pigment in the paint protects from sunlight much more than any clear finish.
Epoxy with black pigment works to fill voids in figured walnut.
