I’d like to make a kitchen island out of a bubinga slab, and ideally have a stovetop in the island (gonna be real hard to cut the opening out of the figured wood, but…) Can you suggest a suitable finish for the bubinga? Other comments welcome as well

There are two ways to approach this, an oil or varnish coating.
If you choose an oil, you won't have a film thickness on the surface. Instead it will be a " close to the grain" finish and will require periodic treatment. The beauty of this finish is it's ease of application. You can wet sand the oil into the surface and then briskly wipe it off. Do this a few times and you'll have a very satiny surface. However, if you mar or scratch the surface, you've scratched the wood also. Be careful of oiy rags with this approach.
If you elect to use a varnish, it will give you a protective film that will resist most household products as well as moisture.
Personally, I prefer phenolic types over urethane's but that's just my opinion.
There was an article not too long ago on oils by Chris Minick. You could always ask Matt Berger for the issue number.
A good varnish system would be a coat of Pratt and Lambert's alkyd sanding sealer followed by a few coats of their number 38 varnish.
There are many types out there. this is just a suggestion.
