I’m in a bit of a panic here and am hoping someone can help. With x-mas quickly approaching, I’ve just finished building an acquarium stand out of some extra cherry plywood I had. I’ll need to have this ready for x-mas but still need to finish it. Can someone tell me a good finish to use on cherry plywood, that will dry fast (and that preferably can be sprayed through an HVLP system).

For that application, I'd spray water based polyurethane (although none of the manufacturers say it's okay to spray) in a couple of thin coats, sanding with 220 grit in between.
Oh wait, you need to have it done by Christmas of this year. You need something that will dry fast so I'd say either shellac or lacquer. Bear in mind, you'll still need time to rub these out. Better get cracking, there's only 36 hours left!
If a satin finish is okay, try danish oil. You can probably put two coats on it, wipe it down and have it be dry by Thursday.

I'm sure you've already started on solving your problem.
Last week I brushed on lacquer (deft, 3 coats) over a coat of shellac and rubbed it out with 600, 1000, 2000 and two coats of wax...24 hours.
As you know the lacquer is even better sprayed and no sanding between coats...very nice...
I would use Magnalac pre-catalyzed from ml cambell, nitrocellulose lacquer, or shellac. All three are easy to spray using hvlp and all dry very quickly. You could easily get 3+ coats done in a day.

Shellac, hands down.
