I would welcome suggestions for finishing cottonwood paneling. I’ve tried several good oil based finishes and all seem to work well except that they yellow and/or darken the wood. The best I’ve found is Minwax paste wax over 3 sanded coats of poly, but that gives the pasty artificial “poly” look with no depth to the grain. Is there any oil based product that won’t yellow or darken the wood?

A very light colored shellac, will not darken the wood much, and more importantly it will not yellow or darken over time. Its not oil based, but ought to work fine for wall paneling that isn't subjet to standing alcohol or ammonia.
