Clear epoxy resin like they use for bars.
BTW if your client wants a wood countertop, he / she doesn't want it to be bulletproof or has a poor understanding of the properties of wood. Just my .02

Industry standard here is 2 pack polyurethane, coating all surfaces including cooktop & sink cutouts.
Other products such as 2 pack polymers with a high build refered to above can also be used and are not uncommon, however care needs to be taken in its use to avoid pinholes on curing.
Both products require approriate respiratory protection during prep & application.

Penetrating epoxy as a sealer/primer, topcoated with bar-top epoxy. Probably as close to bulletproof as you can get.

Ok, I have smiths penatrating epoxy, but don't know where or what to get exactly that would be bar top epoxy. Sounds like this would be my choice to use on this job. Do you know the brand name of the bar top epoxy?

Home Depot sells a epoxy resin bar top coat kit, it is called GLAZE COAT. It runs about $20 for 9 square feet. Check it out.
