I made a new Outfeed table for my tablesaw out of MDF. I need to know if I have to finish it and if so with what? I have an insulated shop.

Finishing an MDF table
I have used sanding sealer on my table - even though I try to keep it dry it still swells from time to time - probably when I have left a cup (tea or water) on the tanle and some has spilt . I have recently sanded a swell off and resealed with sanding sealer.
