Hello All,
I want to under-mount a stainless steel sink in a white plastic laminated particle board countertop. Any suggestions for finishing the exposed cut-out lip of laminate and particle board thats left above the sink? The end result doesn’t have to match the color of the top, just something complementary to the existing color.

Personally, I wouldn't put an undermount sink under a particleboard counter. No matter what you do, the water will get to it eventually.

I'll take your advice and drop the sink in - no worries that way...
I've done it with ply, no problem. PB and water don't mix it's true.
For the rim, you can plane and cut white corian to fit, and apply a light bead of silicone to seal.
