I am putting window casing on the interior of our log home and want to use rough-cut softwood. I want to avoid a stain or a think-looking finish, in keeping with the rest of the house. Any suggestions for a good protective finish for rough wood?

A thin finishing oil such as Minwax Antique oil or something similar would probably fit the bill. These won't give you a surface build but will penetrate into the wood. Watco might be another choice.
The other thing that comes to mind is one of the clear exterior oils used for cedar siding. There are lots of brands out there. One that I've used on my barn is Olympic brand. I'm not promoting anyone's brand as the " best" just making a suggestion.
If you do use one of these exterior oils, try and do it before you install the trim. They have a very heavy odor and I don't think it will be a good idea to have it in the house without a great deal of extended ventilation
Whatever you choose, read the directions and be sure you are careful with any oily rags.
When I get done with any type of oily rag, I'll hang it out to dry , out of the sun. You want to be very careful about spontaneous combustion. I always tell students, it can really ruin your day!!
