I am finishing pine trim in an addition and wanted it to match the existing whitewashed pine trim of the existing house. I’ve already used Minwax’s White Wash Pickling Stain and their Polycrylic Protective Finish with close results. But I hear oil-based brings out the wood better. Is there a way to make the unfinished pine look good without going yellow?

What you've heard is oil will "bring out the wood or grain" refers to applying some type of oil to the surface prior to finishing . Try this on a piece of scrap by wetting it down with mineral spirits or alcohol.. This will give you a basic idea of what an oiled surface would look like.
However, if you are getting good results from the system you tried the first time, why change it?
There are ways to tweak the color by glazing or adding a little tint to the finish.
Do a little research on these steps and create some samples. You might find you make a happy mistake and come up with just the right look. Be sure to make notes of your samples to remember what you did.
