Peter, I have been making some shop accessories ie: drill press table and a wood cabinet drum sander etc.. I have made most of these cabinet grade birch plywood and fir plywood and am thinking I should apply a protective finish on some kind. Any thoughts on what would be applicable or just leave them alone. Please no comments on the Oilers this year.

First off, I would suggest you make a drill press table out of something solid like hard maple. I would leave it unfinished as it will have holes drilled in it at some point.
Concerning your other cabinets; You could leave them raw; a coat or two of shellac sure wouldn't hurt either. A slick surface just cleans up a little quicker. If you do shellac it, just give it a light sanding after each coat and it will shed dust easily.
I won't say anything about the Oilers if you give me the same consideration with the Rangers. BTW, Chris Prongers team seems to be doing quite well.
