I had built a beautiful laminated kitchen counter-top but my finish German carpenter
had to return to Germany before he could apply a finish on my counter-top. The sink is in-layed into the counter-top so a lot of water gets splashed on the wood. I live in
a rural area of southern Ecuador where there is a limited availability of many products. I can buy here boiled linseed oil, basic varnish, basic shellac and wax.
Please let me know how you would recommend to finish this beautiful counter-top.

I would use a varnish for your project. Boiled linseed oil won't give you any surface protection and shellac won't stand up to constant moisture.
A good film of varnish will give you decent water resistance, and is easy enough to re coat in the future.
Be sure and give it at least 3 - 4 coats. Be sure and sand between coats for a smooth surface and good bonding.
