so I had a fairly large project with 4 large pieces some shelves backs and doors.. I have a small shop and after getting a third of the way through finishing it I took it to a shop to have it sprayed with lacquer. I should have checked it better before bringing it home but she had done kitchens for me and no problem. there was quite a bit of shop dust on it but when I dusted it off it was rough. Can I sand this off with say 3000 grit sand paper or? Sure could use some help

Call the finish shop, it sounds like they should see it before you touch it. If they value your business they should offer to make it right.
