Mineral oil. This has got to be one of the top five FAQ's--an archives search will yield more than you'll ever want to hear about the subject.
*I agree with Jed. I just made 27 specialty cutting boards out of a variety of woods. It richens the grain and color of the wood, yet is food-safe. Mineral oil is the way to go.Jim
*linseeed oil (Not BOILED linseed oil, it has nasty drying agents in it) can also work. it also tints the wood a soft yellow that can sometimes look nic.
