I am starting a trout fly tying desk for my son to be made from cypress lumber which is what he wants. I need some tips on finishing this wood. For other projects I have typically used first a Minwax oil or Watco Danish oil followed by Minwax wipe-on poly. Will this be suitable for cypress?

The finish you have used in the past will work on cypress. It is an easy wood to work with. I once had to finish an entire room built with cypress.
You may consider skipping the stain. Make a couple of samples and see what is pleasing to your eye.
