I’m finishing a desk that has six drawers. They are dovetailed: the sides are poplar and the bottom is baltic ply. In the past I have always left them unfinished for now particular reason. What if any finishes to the you use on your drawers?

I schellac them..keeps them cleaner and a nice smooth finish...usually the blonde schellac
I use whatever finish I'm using on the rest of the case. Currently I'm shooting catalyzed vinyl (a type of conversion varnish) on baltic birch ply drawers that have a baltic birch 1/8" ply slide-in bottoms. As I mentioned in another thread here... this catalyzed vinyl produces a very silky smooth finish that just begs to be fondled. I'm reducing it with my favorite lacquer blend of MEK and PM Acetate and it sprays out really great. No overspray problems at all. I finish the bottoms separate from the rest of the drawer. Although I did finish some a couple weeks ago that already had the bottoms pin-nailed in and they finished out great too. It's just easier with the bottoms out 'cause that way you avoid all the blow back.

I like your website. I go two routes with finishing drawers. I often use baltic birch, cherry or maple sanded to 320 or so, and then just buffed with wax. If a drawer is going to see a lot of use, such as clothes and such, I'll use a low sheen water based product that I'll either spray or just use a foam brush. Three coats with red synthetic sanding between each and the drawer has a nice silky feel and look to it. I once used an oil based product inside a dresser. That was ten years ago. You can still smell it in there.

I wipe on varnish two coats only . This is not a location where you want to use a brush!
Anyone use sanding sealer to finish drawers? A commercial shop I worked at some years ago used it to finish all their drawers.
