The wife wants to make some curtain rods out of tree branches. I’m thinking of debarking the branches so that down the road, it doesn’t
peel off and make a mess. Then of course, I’d like to put a varnish or poly finish on them. But, I’m not sure exactly what to put on them since
they’ll be green. Does it matter? If I can simply just put a few coats of
varnish or poly on them, let me know.

Just read your post. Here's my opinion for what it's worth........
One of the reasons paint peels of the outside of your house is because of moisture underneath it. I would think any finish applied over wet wood would peel off.
But then, I've bought wood with the ends sealed with paint and it doesn't appear to have peeled off. Maybe it's not just paint. How about applying the poly to the whole stick but not the ends?
