I plan on using oil-based stain to finish the interior of a pine window, with crank panes. What would be best to seal it— spar urethane or polyurethane? Thanks!

Either one will be fine. Make sure the stain is completely dry, and leave the window open for several days, if you can, after the last coat of finish. Or at least open it for part of the day. After you think it has dried, it can still glue itself shut.
