I've used Danish oil (2 coats), waited 72 hours, then used 2 or 3 coats of wipe-on poly on shelves, and this seems to give a very nice, durable finish. For this project I didn't use any of my Jatoba stock with outstanding grain patters, however.
I just finished a bedroom suite using Jatoba. (HEAVY) I just used a satin wipe on poly (3 coats) with no stain. Looked nice as is. The wood will turn a nice, somewhat dark, reddish patina in a short time. Be careful about letting it be exposed to the sun with something on it. You'll end up with a "spot". Good luck
