I sanded it with wet/dry 400 and 600 using mineral oil. How might I finish the piece?

I'm assuming you mean the inside of the bowl. You can use any type of finish you want as after they are fully cured they are " food safe" The FDA has said the same thing.
If you feel better, you could use beeswax . Tung oil is also an option.
Shellac could also be used,although while it can be rinsed, you don't want to scrub it. However, shellac is easy recoat as each coat bonds with itself.
Concerning the mineral oil, it NEVER dries or cures. If you want to remove it, you would have to wash and dry it repeatedly with a solvent. Even then, you might not get it fully removed. A thin coat of shellac would help[ lock in any residual oil and you could proceed with your finish of choice.
