When I put down one coat of finish (lacquer and poly did same) and sand with 320 it turns into a white mess vs smoothing it out and taking some of the “gloss” away. Any ideas?

If all you're trying to do is tone down the gloss I think 0000 steel wool is what you need.

Yes, that is normal. You then keep adding coats and sanding in between until all ridges are gone and apply a final coat without sanding afterwards.

If you are going to sand use a rigid block. A soft pad will always dip in a bit and slow your progress.
Only worry about knocking the sheen down on the last coat.
