I need advice on finishing wood. I am building bookcases and cabinets to a wall and is it necessary to put polyurethane on the pieces of wood that will not be seen? For example, does the back of the paneling of the bookcases or the edges of the shelves need to be finished? Does all wood need to be protected once it is installed?

It's probably a good idea to get at least one coat of finish on everything. If all surfaces and edges are sealed, your wood is less likely to cup or warp due to uneven exposure to variations in moisture levels (i.e. humidity).
As far as the shelves go, it would probably be more trouble than it's worth to not stain & finish the edges.
This is easy for me to say since I spray almost all of my finishes. Everything gets at least one coat and visible surfaces get second and sometimes third coats.
