Finishing Wooden Handles on Kitchen Pan
I am restoring handles on a pan. The old handles (made of oak) had a little accident. They were burnt off on a commercial gas stove. My question is: what type of finish do I put on the handles? I am nervous that whatever finish I use it will be more flammable than the bare wood (I am using oak). Also this pan is used in a commercial kitchen and will get hand washed and then steamed so another concern is if I don’t put a finish on the handles then the wood will dry out and crack. Any advice on this would be great! Thanks in advance.

You remind me of my childhood and my mother's French aluminum pans with wooden handles, also very scorched. I would put no finish on it just like a cutting board. I don't even think spar varnish would stand up to the constant washing and heat. The wood will be fine.
