I’m building a cabinet using “flipper hinges”. The kind that you open the doors and slide them into the sides of the cabinet.
What is my criteria for ordering the size hinge I want. They start at 12″ and progress up to 28″.
Is the width of the door supposed to be equal to the size of the hinge? Or is the hinge size determined by the depth of the cabinet.

It's the depth of the recess into which the doors slide.

I wouldn't buy a 28" for a 12" door. The type of slide you choose will determine how wide a door it will handle for a complete retraction. Those that use a "follower" usually require around 4" more slide than door width. The rack and pinion type don't require so much as I recall.
Most doors don't retract all the way anyhow, since the knob will hit the front of the cabinet before the door is all the way in.
Check with the manfacturer or dealer on length per door width. Also on height and door thickness. You may need 40mm hinges with doors thicker than 13/16ths on those systems using cup hinges.
