I recently did my first glue up using Mosser granulated hide glue. The joint fell apart. I think it was because the shop was too cold. When I was steaming and scraping the hide glue out two weeks latter, I noticed little black dots of what looked like mold.
I think I may have used too much water and then didn’t get the glue hot enough (The water temperature was 140).
Has anyone have any suggestions?

I think I would spend some time gluing scraps together until I was pretty confident of my technique. It sounds like you at least have a couple ideas about what to do differently.
It may sound obvious but I find that it helps to just warm the wood with a hair dryer .During the humid months I put one drop of iodine in the glue to discourage mould forming when I leave it a few days before reheating.Reheating. I only do once per batch. See F.G it is ok to have a hair dryer and an iron in a woodshop :-)
