I’m building kitchen cabinets for the first time (have over ten years fine woodworking/carving experience–but no kitchens!) and am going frameless. I’ve built all my doors and drawer fronts and am trying to determine reveals between them. I’ve planned on using blum 107 degree full overlay hinges, but I am having trouble getting more than 5/8″ overlay. The case sides are 3/4″ Melamine, so that leaves me with 1/4″ gap between adjacent doors—yuck! I must be doing something wrong. I’m using 0mm plates. I have the doors and drawers cut to “final” size leaving 1/16″ reveal, which I would like to get close to. What am I missing?

Blum say those 107 degree hinges will overlay 17 mm max, so you're not far from that at 5/8". Blum has a related hinge they call "120 degree max overlay" that will overlay 19 mm (3/4"), and should solve your problem.
I use the compact 90 series they have overlay from 1/4" to 1 1/2 overlay plates. They dont have all the adj that the others do but a great variety of O/L sizes. I ge them from austin hardwoods in Santa Ana calif
