I am building a kitchen in my new addition. The cabinet frames and doors are cherry, danish oiled and finished in water-based satin acrylic polyurethane. I’ve been brushing the larger panels and have noticed that no matter how careful I am there are a few small bumps and bubbles in the finish. Even after three coats I can’t get it perectly smooth. Is there a way to get what I want with brushing or do i need to fire up my HVLP sprayer?

Sorry to say, but there is no way to brush on a finish that won’t require some kind of rub out. Actually I believe that even a sprayed finish requires a hand rubbing to achieve the best possible surface.
Art , As far as a brush on finish , Deft clear wood finish is what is called a self leveling finish . Basically it is brushing lacquer. Still thin coats with sanding between coats will give the best results. I use an airless for all my work , but I have seen painters on the job brushing on conversion varnish or it's equivalent and I got to tell you it was beautiful and all but flawless. good luck
