I’m building a kitchen cabinet for a friend. It’s a basic shaker style, but the door panels for the upper cabinet will be glass. Because of this ability to ‘see’ into the cabinet they are asking if the shelves can be glass, instead of wood. There will be two different sizes for the shelves: 12”x14” and 12”x27”. Is having a glass shelf a good idea? How thick should the glass be? Is 27” too long without a center support?

¼" tempered glass is what you need. Tempered Glass can't be cut after tempering so you must order it cut to size. I recommend you wait until the cabinet is made to measure and order it
Is it for decorative stuff? Meaning light? Having some vases it will be fine. But I wouldn't put big stacks of regular dinner plates on a 27" glass shelf.
¼ tempered glass can hold a complete set of dishware over 27". If you are nervous about it you step up to ⅜"
Thanks for the comments. Just as a reference I called a couple of glass places for a price. For four 1/4×12×14 and one 3/8×12×27, the quotes were $400 and $500. Holy moly! To me that is too much for the 'look'. However, I'll let them make the call.
I would be curious to know how much of that cost is the ⅜" piece, which is really overkill and frankly my not look good. I just spent $185 on 4 pieces approximately the same size as your smaller ones. Tempered Glass is very strong(approximately 24000 psi breaking point vs. 6000 psi for ordinary annealed glass) and ¼" is fine for a 27" cabinet and is what my commercial cabinets ship with. ⅜" glass is used for tabletops and frame less shower doors I don't know that I have ever seen a cabinet use it.
With just support on the sides a ¼" tempered glass shelf of that size can hold over 120 lbs add a center pin on the back of the cabinet and it is over 600lbs.

I built a small curio cabinet for my GF's daughter's wedding gift, with four 1/4" shelves; your quotes are shocking but, right now, so is the cost of 6 chicken thighs. Dunno.
That cabinet was destroyed by a baseball bat during the divorce a year later; sigh.
