I’ve been building furniture for nearly 30 years and usually I just let the glue dry and pop off with a chisle, well today I was gluing up some Cherry night stands and decided to wipe of with wet rag, all that did was smear the glue into the pores. Question is what do you all do with your squeeze out?

I never use a wet rag, that's for sure. On a panel glue up, with yellow glue, I wait one hour, and use a scraper to remove the squeeze out. On joinery I always use hide glue. It doesn't interfere with finishing the way that yellow glue does.
I rub a bar of paraffin on the faces around the joint and let the squeeze out harden. It pops right off with a card scraper or even a fingernail. The scraper also removed the majority of the paraffin. The rest can be removed with mineral spirits which also makes it easy to see if you missed any spots and have glue soaked into the wood. I find oil based finishes will just dissolve and tiny bits of paraffin that remain.
The paraffin is cheap at the grocery store. A box of four bars is less than $5. It lasts a long time, and it's also handy for lubricating plane soles, miter gauge slots, and wood screws.
For me, it comes down to what stage im in when glueing. If ive already sanded flush i will let it dry and scrape it off. If ive left 1/16 for final sanding ill go ahead and wipe it up and just sand down. Ive never had the glue penetrate so deep into the pores that i cant sand it off.
