my current project will require a somewhat complicated glue-up, and i am concerned that my typical wood glue (type 2 Titebond) will set up too quickly. Does anyone have (good) experiences with glues which provide slower set-up times? what brands are reccomended?
ps… the material is hickory.

Titebond makes a PVA glue called Extend that has an open time of 20 - 30 min.
Use liquid hide glue for internal applications. It gives about 15+ minutes open time at about 65 deg F.
Alternatively consider Polyurethane types which can give up to 20 mins open time.
Some types of epoxy resin will allow up to 30 minutes of open time.
None of the above suffer from creep, whereas the PVA types you're asking about do, which might be a significant disadvantage-- or may not matter. It depends
