What kind of glue should I use to glue Azek face to Fir face. I am thinking Gorilla. An epoxy would work I think but I have no experience in epoxys. Any help would be great. Thank you.

The easiest way to get a good answer to your question is to call the manufacturer at the number listed in the title. They can tell you what they recommend and you can tell us.
I don't think gluing Azek trim board to a wood backer is a good idea as they probably have very different expansion contraction rates. Azek has a thermal expansion rate of 1/8" per 18 feet, said to be similar to wood. But a fir board will expand cross grain a lot more due to moisture and Azek will not.
