I have a project where I need to adhere cork to maple. I thought I could just use double stick tape, but the edges are not holding well. On the other, the tape is proving hard to remove from the maple. Is there something easy I can use that will adhere the cork to the tape that is on the maple? Preferably something not too messy with minimal squeeze out issues.

I would think contact cement would get the job done. Either rolled on or sprayed. I would put 2 coats on the cork just to be safe and 1 or 2 on the Maple. I would prefer to remove the tape(try a heat gun) but I think you could skip that step if you had to.
Lighter fluid, the kind used in Zippo lighters is good for removing glue. What I'd do with the cork is fill the pores on one side with a pva glue/water 50/50 mix. Think Elmer's white glue or regular yellow wood glue. Pack it in fairly liberally with a putty knife then wipe off excess.
It should dry quickly. Once it's cured (give it an hour) any wood glue will adhere nicely.
