When they talk of angles of a gouge, spindle for example, is the angle from the bottom up, or from 90 degrees down from the top if the gouge was laying level. In other words the gouge laying level would be 180 degrees, so up 40 degrees that way would be 50 degrees down from a right angle. So in this example what degree would this be, I think I have been reading this wrong, still learning. Thank You Doug

The angle of a spindle gouge is the inclusive angle, formed by the flute and the bevel, where the bottom of the flute meets the bevel. For a spindle gouge this should be between 25° and 30° The angle at each side should be about the same but much depends on the flute shape and depth, so varies from gouge to gouge. Usually it is a shorter grind at the flanks but 90% of the work done by a spindle gouge is done in close proximity to the nose, so it matters little.
