A shadowbox....
I've never seen a display with a cap and gown, but what comes to mind is a shadow-box style such as the ones I used tomake for autographed sports jerseys. It's been awhile, can't remember the measurement details, but I made them with drawer-lock joints in the corners for strength, and covered with a mitered face frame. The back was rabbeted and thin plywood inset. The inside had art-store poster-board (is that what they call it? can't remember), color chosen by the client. Front was acrylic (Plexi)
Jersey was pinned tastefully with stainless steel pins, heads hidden. Double-wire for hanging. It was purposely made to not have a hinged and openable front, due to the value of the jerseys (Cal Ripken, Griffey, Jr., etc.) You could do it differently for a grad robe, make it easier to re-pin if needed.

Haven't seen one but here's an idea to consider:
Maybe a shallow wall hung case with a diamond top to hold the cap(mortar board) then a thin shelf and the gown folded and presented horizontally.
A little glass door. With the mortar board with the points up and down the tassle could be oriented to indicate... a graduate.

Do grads these days have even the option to buy the baccalaureate cap and gown, I thought they are all rented. So the usual souvenir is the tassle. And, the diploma to be framed. Shoot, I even rented mine when I had to go to commencement ceremonies as a professor, though a fair number of professors end up buying them, especially the hood that proclaims the doctorate and it's school. .

I've been through a few of these now. With my under-grad stuff, one school you rented but you kept the tassle, a second school you bought and got the whole 9 yards(MBA). I have all my tassles and my mortar board from my Masters program( MBA). My wife does scrapbooking and did some cool stuff with it, but I think a display case would be cool. Post pic's of what ever you make. Have a good one!
I'd make it in the shape of an empty bank book. ;-)
