When making drawer sides with real wood ( not ply etc) which is the best way to align grain / cupping with dovetail joints. Please help

Top and bottom more likely to hold the middle in this way than ))) ((( where an edge could break free - but the "real right way" is to use quartered stock to avoid the tendency to cup and stick the drawer.
