When reading a post here about making a china cabinet the writer mentions he joining two peices “end grain to end grain.” I’m a beginner and just wondering if the grain direction of the wood matters when jointing two peices and the gluing.

Oh, yeah. The bigger part of successful building is being able to choose the correct joint for the orientation of the wood to be joined.
End grain to end grain. I believe the poster was referring to a joint between a vertical board and a horizontal one, to be joined at the corner where the ends abut one another. Perfect place for dovetails.
