I need to glue up a door frame 2 7/8 thick. I will be doing this with three separate frames, the two outside at 1 1/16 and the center 3/4″. My question is about the growth ring orientation. Should they be opposite or the same.

I don't know if it will make a difference. I would choose the best face to go out.
With a door that thick I would use stave core construction, narrow strips glued face to face to make up the width you need, and then veneer the outer faces. Much more stable over time.
I think there are some companies who sell stave core material, but maybe not in the thickness you need.

By far the best choice would be to use quarter sawn wood, that way the boards won't be fighting each other and the frame will be more stable.
If you can't use quarter sawn, then orienting the rings to face the same direction is probably the best bet, but given the boards thicknesses, you still might have problems with wood movement opening up the glue lines at least a bit.
