I have a 3 inch thick, 2 ft wide log cookie that i am wanting to turn into an end table. The problem is its green. By standards this would take 3 years to dry. Would anyone recommend make the table while it is still green? I would wait a couple of months while it air drys in my basement, then flatten finish and seal.

The faster you dry it the more likely it will split Pac Man style. If you wax or paint it and store it outside under cover your chances go up. At 2' across and only 3" thick it will probably split anyway.
A cookie is effectively all end grain and will dry faster than 3" thick flat stock, and the inch per year guideline is based on flat stock.
I might try PEG (polyethylene glycol) green wood stabilizer. It's likely your best bet to minimize cracking. Rockler and other places sell it.
Polyethylene glycol is also used in many laxatives, and is the primary ingredient in the colon prep they give you before a colonoscopy.
So THAT's why Steely Dan is always playing in the waiting room!
I’d soak it in Pentacryl to prevent cracking. Store it in a dry area and it will dry well. Depending on what legs you attach you might be able to get away with assembling it green. Finish it when dry.
