I just acquired an old Walker-Turner 1750 rpm grinder along with a heavy
cast iron pedestal. Unit works fine, but calls for 7×1 inch wheels. I’d like to
use Norton white AO wheels, but it seems they only come in 6 and 8 inch diameters.
Any reason I can’t just use the 6 inch wheels? The tool rests can easily move in to accommodate the smaller diameter. I’m hoping to use the thing to create hollow
ground bevels on my bench chisels (noting the recent FWW video by Bob Van Dyke…)

No reason you can't use a smaller wheel. Check McMaster Carr brfore you give up.
Sooner or later, 7 inch wheels end up at 6 inches. I have 5 inch wheels that started out at 8.
I forget the source, but 7 inch wheels are still being made.
From what I hear, for hollow grinding smaller wheels are better anyway. If someone with actual knowledge will confirm that, you may want to forget about 7” wheels entirely for that purpose.

Smaller diameter hollow grind gives a deeper hollow. Nothing worth preferring IMO.
