Try a trade supplier for butchers or a slaughterhouse supplier. Fine chain mail gloves, worn by boners and other knife hands in NZ, and presumeably elsewhere.

The Kevlar gloves that Woodcraft sells are excellent. You can get similar ones at some sporting goods stores sold as fish filetting gloves. You'll find them in the fishing tackle areas with the filet knives. Woodcraft offers a better range of sizes but keep in mind "if the glove fits you must carve with it" (:-)
