What are people’s favorite rust removal agents to use? I like Evaporust, white vinegar, or Simply Green, but I’m wondering what others preferred methods are. It’d be great to get just a big list of all the possible things to use for rust removal when I don’t feel like getting more stuff and just use things around the shop

Electrolysis. If you already have a battery charger it is cheaper than one bottle of any goop out there.
The options you listed all work. I have learned not to soak in Evaporust any longer than absolutely needed or else the remaining metal is darkened. This is a purely cosmetic issue; only matters if that's important to you.
Additionally, check out the video James Wright posted a few weeks ago on the "Wood by Wright How To" channel on youtube. Looks like he's got a new recipe that is very effective and cheap/simple to make at home. It's what I will be trying next time.
Just watched that video, it almost seems to good to be true, that's definitely what I'll be trying next
