Basically looking for recs on what tool would be ideal for removing large amounts in 1 pass on 200-250 mm wide boards.
I make outdoor tables mostly using hardwoods such as ironbark, spotted gum and blackbutt. Much of it is seasoned depending on where I can source it from.
I find that the tops look a lot better when using wide boards 200-250s ideally.
Just trying to get ideas on the most efficient way to get these roughly to similar thickness as they can vary up to 10 mm.

Thickness planer? Sorry, it seems like a trick question.
The beefier the planer, the more you can take off in a single pass. A lunchbox planer will surface your wood just fine. A 5hp model with segmented spiral carbide cutterhead will do the job faster. But regardless, trying to remove 10mm or more in one pass isn't going to happen.
A bandsaw would let you remove the bulk of it. Depending on how smooth you need it you can clean up the sawmarks on a planer or jus flip them to the underside.
