I am just beginning the kitchen remodel process and am looking for some information regarding cabinet finishes. I live in California and understand that certain cabinet finishes are banned in California due to environmental concerns, leading most people to recommend out of state cabinet manufacturers.
Is this a big deal?
What are the best cabinet finishes? Will these finishes be standard on most non California cabinets or do they only come on the higher end?
What are the tradeoffs between the various finishes?
FYI I am planning to buy Cherry cabinets.
I also assume paying for plywood rather than MDF construction is worth the additional money but would welcome feedback on this as well.

Most cabinet manfctrs will shoot the Cherry with Lacquer.

Crazyfornia has lots of V.O.C compliant BS. Precat finishes or conversion varnishes are very durable.
Check out Target PSL at http://www.homesteadfinishing.com. It's waterbourne, low VOC's, and sets up as tough as solvent CAT lacquers.
Check out Fuhr International Finishes. They make some of the best waterborne finishing products today.
I personally think ply is better than the MDF or melamine. I think if you are building them yourself you will be better satisfied with ply boxes. I heard a lot of good things about fuhr finishes that have been recommended here. But there is no distributor here in SoCal of the Fuhr products that I know so you would have to buy mail order or over the internet. I dont really like that. I however really like enduro coat. They are distributed through compliant spray systems http://www.compliantspraysystems.com located in San Clemente calif. You can also get it at Austin Hardwoods in Santa Ana Calif.
