Those planes feature a “U” on the frog underside and beneath the tote. Any info out there as to meaning?

I believe the "U" is a foundry mark
John:
The "U" is a foundry mark. I couldn't tell you which foundry. Earlier types had an "S" for Sessions Foundry or a "B" for some other foundry. Personally, I always liked the WWII vintage Stanley's because of the heavier castings. They make some of the best users.
