Do you know of a “simple” method to calculate the needed bevel angles and miter angles to build a haxagonal and other (square) pyramids? Better still, do you know of a website (for Mac) with a calculator to enter the size of base, height of pyramid and number of sides and it would give you the needed cutting angles?

I think you might have stumped us with this question but I'll give it a try and then ask someone else to jump in.
I worked with an author on this table article which featured a how-to on making a six-sided tapered colum. The author cut a 30-degree bevel on each side of the six staves (for a total of 12 beveled edges) after tapering them based on the dimensions at the top and bottom of the column.
This leads me to believe that all the bevel angles combined should add up to 360 degrees no matter what (30 x 12 = 360).
So if you're making a five-sided pyramid, the bevel angle should be 360/10, which is 36 degrees, and it should be cut on the edge of each stave after you cut the taper.
Does that make sense? Post again either way to let me know if that helps.

Have you tried the compound angle calculators at woodbin.com?
Also take a look at the compound miter chart at: betterwoodworking.com

Thanks for the input. The chart I found on betterwoodworking.com was very helpful. It confirmed my trial and error attempts but now I have a great reference for different slopes as well as # of sides! Couldn't open the woodbin.com calculator on my Mac! Disappointing as it sounded like it would have been good.
