I have a big pile of air-dried hickory, mostly 4/4. I want to make a nice workbench out of it. How would a benchtop made of hickory hold up for the long term. Thank you.

I think that a top made out of hickory would be great! If it is tough enough for ax and hammer handles I would think it would hold up pretty well for a bench top!
Just mill is carefully so it is flat and straight. I would probably rip strips to around 2 3/4 thick and then face glue them to make a top to finish around 2 1/2" thick with the edge grain up- lots of work but worth it.
