I’m hoping to learn the name of this sort of hidden fastener, seen here in a 1950s Danish modern chair by John Stewart Inc. where the back-support frame attaches to the armrest/leg frame. Also, any thoughts on a (simple) superior fastener option which would be hidden and allow for disassembly? Thanks for your input!

It looks like some sort of keyhole fastener.
I agree, the plate is a simple keyhole plate. Not sure of a source but it wouldn't be a difficult thing to make a couple of them. The stud could be a simple round-head or button head screw.
