Lots of woodworkers dismiss Hide Glue outright. Other folks are just happy with the glue they are using and they just haven’t thought of the merits of hide glue. I use it a lot and also wonder why it is not more widely used. I like it for quite a few reasons. What other glue allows you to correct a frame (like a drawer carcase) that comes out of the clamps slightly out of square so easily; simply heat the joints with a hot air gun and reclamp.
