   I just Googled for

   "hide glue" "shelf life"

   and five of the first seven hits said it will last indefinitely if stored in a cool, dry place. In this context, dry probably means something like with a dessicant in a paint can, rather than in a plastic bag with a rubber band around it.

   Thanks, Uncle Dunc. Wow, my mind went blank. I didn't even think to look there. I've had one container, unopened, for about 2 years. I just ordered a new can to use for a veneering project, and wanted to see if the old one was still ok.

   If properly stored in a cool dry dark place it will last indefinitely.  One interesting fact is that old hide glue that has been properly stored is actually better than new manufactured granulated hide glue.  Seems to develop a stronger nature with age.
